Today’s post is… Cucumber and Tomato Salad! We decided to throw together simple ingredients for a smooth, quick, light, and refreshing salad. We wanted to detox after watching an interview with Dr. Sebi’s kinfolk. We enjoyed this salad because of the ease to make as well as how it helped to supply vital nutrients and electrolytes!
- 4 cucumber (medium )
- 3 roma tomatoes
- 1/2 red onion
- For Red Wine Vinegar Dressing:
- 1/2 cups grapeseed oil (more or less, depending on taste)
- 1/4 cups red wine vinegar (more or less, depending on taste)
- salt (to taste)
- pepper (to taste)
Wash all vegetables. Peel and roughly chop cucumbers. Chop tomatoes. Slice or dice onions as preferred. Combine in a large bowl.
Use a blender to immerse the following ingredients for the dressing: oil, vinegar, salt, and pepper. Blend well and pour over vegetables. Stir the vinaigrette into the salad.
The addition of parsley or cilantro is a great idea! Cover and let marinate in the refrigerator for at least an hour or overnight.
