Ingredients for Quinoa & Kale Salad with Raspberry Vinaigrette(8 servings)
- 1 bundle of kale (rinsed & chopped)
- 2 cups of quinoa (rinsed)
- 1/2 cup of onion (diced)
- 3 cups of water/broth
- 1 cup of roasted pistachios
- 1/2 cup of cranberry
- 1 cup of piquante peppers (sliced/julienne cut)
- 1/2 teaspoons salt
- 1/2 teaspoons garlic powder
- 1 tablespoon of Avocado oil
First, rinse and cook quinoa. For every cup of quinoa, you will add 1.5 cups of water. Bring water or broth to a boil. Next, add quinoa into the pot lowering the temperature to a simmer and adding the top to the pot. Then, cook the quinoa for roughly 15 min or until all the water is gone. Now, remove from heat and let rest.
Second, cook kale and diced onion. Add oil to the pan and turn heat to a medium level. Once the oil reaches set temperature, add the diced onion and kale. Add salt and garlic. Then, cover the pan to allow the kale to cook for 7-9 minutes. Now that the kale is soft, remove from heat and cool down.
Third, in a large bowl, add the cranberry, pistachios, piquante peppers, cooked quinoa, kale, and onion. In this large bowl, mix up the salad, and you are almost done.
Finally, add raspberry vinaigrette or your favorite salad dressing and enjoy!
